Using non-stick aluminum pans allows delicate foods to be fried gently and crisply without sticking. Despite this, there are differences because the non-stick coatings can be made from a variety of materials.

 

The most popular is the classic coating made of polytetrafluoroethylene, or PTFE for short. Ceramic pans, on the other hand, are made without the use of PFAS (per- and polyfluorinated alkyl substances) or PTFE. Fissler ceramic coating is also made without added PFAS/PTFE.

Ceramic pans from Fissler

Fissler ceramic pans are an excellent alternative to conventional pans with PTFE coating. They have a robust surface and offer very good non-stick properties.

With a coated pan made of ceramic, frying becomes particularly responsibly. Nevertheless, the PTFE-coated pans from Fissler are also harmless to health. According to VO (EC) No. 2019/1021, all Fissler pans are PFOA-free.

How to use ceramic pans

Fissler has optimized the thermal properties of the ceramic coating, which is in competitor products susceptible. A more elastic bond between metal and ceramic coating has been realized for the Ceratal® coating. This reduces cracking and preserves the non-stick properties.

 

Ceramic pan surfaces react to heat in a similar way to other ceramic objects:

  • If the temperature increased dramatically, the metal expands faster than the surface and the ceramic coating can crack.
  • Conversely, the so-called thermal shock can cause damage, such as cracks. This occurs when the hot pan is soaked with cold water.

 

Food residues, e.g. fats, adhere to the cracks that form. While frying food, these damaged areas act like suction cups that "hold" the food. This reduces the non-stick properties.

 

To maintain the non-stick properties for a long time, you should therefore:

  • Heat slowly and evenly

  • When hot, the pan should not be soaked in cold water

 

 

Care and cleaning ceramic pans

 

Despite the high quality of Fissler ceramic pans, the life of the ceramic coating depends on care:

  • Prolonged cooking of acidic foods or cleaning in the dishwasher damages the coating in the long-termdamages the coating in the long-term. This can quickly cause it to lose its non-stick properties.
  • The use of aggressive and abrasive materials also has a negative effect on the non-stick effect.

 

To benefit from the non-stick properties of your pan for as long as possible, you should:

  • Clean gently by hand after each use. Use warm water, a little washing-up liquid and a soft cloth.

  • Do not use abrasive cleaners or scratchy cleaning sponges. Cleaning in the dishwasher is also not recommended.
